Ingredients
- 1 packet Tean's Gourmet Paste for Chicken Curry (7 oz / 200 g)
- 3.3 lb (1.5 kg) chicken, cut into pieces
- 2 medium potatoes, peeled and cut into wedges
- 2 cups (500 ml) water
- ¾–1 cup (200 ml) coconut milk
Instructions
- Place the curry paste in a wok or large pot.
- Add the chicken and potato wedges.
- Stir and fry over medium heat for about 5 minutes, coating everything well with the paste.
- Pour in 500 ml (2 cups) water.
- Cover and simmer over low heat for about 15 minutes, or until the chicken and potatoes are cooked through.
- Stir in 200 ml (¾–1 cup) coconut milk.
- Bring to a gentle boil for 1–2 minutes, then turn off the heat.
- Serve hot with steamed jasmine rice, roti canai, or French bread.
Tips
- Add carrots or green beans during the last 10 minutes of cooking for extra vegetables.
- If you prefer a thicker curry, simmer uncovered for a few extra minutes.
- If you like it milder, add a little more coconut milk.
- For a richer flavor, use bone-in chicken thighs or drumsticks.
