Ingredients

  • 1 packet Tean's Gourmet Paste for Chicken Curry (7 oz / 200 g)
  • 3.3 lb (1.5 kg) chicken, cut into pieces
  • 2 medium potatoes, peeled and cut into wedges
  • 2 cups (500 ml) water
  • ¾–1 cup (200 ml) coconut milk

Instructions

  1. Place the curry paste in a wok or large pot.
  2. Add the chicken and potato wedges.
  3. Stir and fry over medium heat for about 5 minutes, coating everything well with the paste.
  4. Pour in 500 ml (2 cups) water.
  5. Cover and simmer over low heat for about 15 minutes, or until the chicken and potatoes are cooked through.
  6. Stir in 200 ml (¾–1 cup) coconut milk.
  7. Bring to a gentle boil for 1–2 minutes, then turn off the heat.
  8. Serve hot with steamed jasmine rice, roti canai, or French bread.

Tips

  • Add carrots or green beans during the last 10 minutes of cooking for extra vegetables.
  • If you prefer a thicker curry, simmer uncovered for a few extra minutes.
  • If you like it milder, add a little more coconut milk.
  • For a richer flavor, use bone-in chicken thighs or drumsticks.
