Ingredients
- 1 packet Asian Home Gourmet Thai Yellow Curry Spice Paste (50g)
- 500g (1 lb) chicken, beef, shrimp, fish, or tofu
- 1 tablespoon cooking oil
- 1 can (400ml) coconut milk
- ½ cup (125ml) water or chicken stock
- 2 medium potatoes, cut into chunks
- 1 small onion, cut into wedges
Instructions
- Heat 1 tablespoon of cooking oil in a saucepan or wok.
- Add the Thai Yellow Curry Spice Paste and stir-fry for 1–2 minutes until fragrant.
- Add the chicken, beef, shrimp, fish, or tofu and stir until coated with the curry paste.
- Pour in the coconut milk and water (or chicken stock). Stir well.
- Add the potatoes, onion, and carrot (if using).
- Bring to a gentle boil, then reduce the heat and simmer for 15–20 minutes, until the meat is cooked and the vegetables are tender.
- Garnish with fresh cilantro if desired and serve hot.
