Ingredients

  • 1 packet Asian Home Gourmet Thai Yellow Curry Spice Paste (50g)
  • 500g (1 lb) chicken, beef, shrimp, fish, or tofu
  • 1 tablespoon cooking oil
  • 1 can (400ml) coconut milk
  • ½ cup (125ml) water or chicken stock
  • 2 medium potatoes, cut into chunks
  • 1 small onion, cut into wedges

Instructions

  1. Heat 1 tablespoon of cooking oil in a saucepan or wok.
  2. Add the Thai Yellow Curry Spice Paste and stir-fry for 1–2 minutes until fragrant.
  3. Add the chicken, beef, shrimp, fish, or tofu and stir until coated with the curry paste.
  4. Pour in the coconut milk and water (or chicken stock). Stir well.
  5. Add the potatoes, onion, and carrot (if using).
  6. Bring to a gentle boil, then reduce the heat and simmer for 15–20 minutes, until the meat is cooked and the vegetables are tender.
  7. Garnish with fresh cilantro if desired and serve hot.
