Ingredients

  • 1 packet Asian Home Gourmet Thai Red Curry Spice Paste (50g)
  • 500g (1 lb) chicken, beef, shrimp, tofu, or mixed vegetables
  • 1 tablespoon cooking oil
  • 1 can (400ml) coconut milk
  • ½ cup (125ml) water or chicken stock
  • 1 cup vegetables (bell peppers, bamboo shoots, eggplant, green beans, or zucchini)

Optional

  • Fresh Thai basil leaves
  • Kaffir lime leaves

 

Instructions

  1. Heat 1 tablespoon of cooking oil in a saucepan or wok.
  2. Add the Thai Red Curry Spice Paste and stir-fry for 1–2 minutes until fragrant.
  3. Add your chicken, beef, shrimp, or tofu and cook for 3–5 minutes.
  4. Pour in the coconut milk and water (or chicken stock). Stir well.
  5. Add the vegetables and simmer for 10–15 minutes, until the meat is cooked and the vegetables are tender.
  6. Stir in Thai basil leaves or kaffir lime leaves, if using.
  7. Serve hot.
