Ingredients
- 1 packet Asian Home Gourmet Thai Red Curry Spice Paste (50g)
- 500g (1 lb) chicken, beef, shrimp, tofu, or mixed vegetables
- 1 tablespoon cooking oil
- 1 can (400ml) coconut milk
- ½ cup (125ml) water or chicken stock
- 1 cup vegetables (bell peppers, bamboo shoots, eggplant, green beans, or zucchini)
Optional
- Fresh Thai basil leaves
- Kaffir lime leaves
Instructions
- Heat 1 tablespoon of cooking oil in a saucepan or wok.
- Add the Thai Red Curry Spice Paste and stir-fry for 1–2 minutes until fragrant.
- Add your chicken, beef, shrimp, or tofu and cook for 3–5 minutes.
- Pour in the coconut milk and water (or chicken stock). Stir well.
- Add the vegetables and simmer for 10–15 minutes, until the meat is cooked and the vegetables are tender.
- Stir in Thai basil leaves or kaffir lime leaves, if using.
- Serve hot.
