Ingredients

  • 1 packet Asian Home Gourmet Indian Chicken Curry Spice Paste (50g)
  • 500g (1 lb) chicken, cut into pieces
  • 2 tablespoons cooking oil
  • 1 medium onion, sliced
  • 2 medium potatoes, cut into chunks
  • 1 cup (250ml) coconut milk
  • 1 cup (250ml) water

Instructions

  1. Heat 2 tablespoons of cooking oil in a pot or deep pan.
  2. Add the sliced onion and cook until softened.
  3. Stir in the Chicken Curry Spice Paste and cook for 1–2 minutes until fragrant.
  4. Add the chicken and stir until well coated with the paste.
  5. Add the potatoes, water, and coconut milk.
  6. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the chicken is fully cooked and the potatoes are tender.
  7. Stir occasionally. If the curry becomes too thick, add a little more water.
  8. Serve hot.
