Ingredients
- 1 packet Asian Home Gourmet Indian Chicken Curry Spice Paste (50g)
- 500g (1 lb) chicken, cut into pieces
- 2 tablespoons cooking oil
- 1 medium onion, sliced
- 2 medium potatoes, cut into chunks
- 1 cup (250ml) coconut milk
- 1 cup (250ml) water
Instructions
- Heat 2 tablespoons of cooking oil in a pot or deep pan.
- Add the sliced onion and cook until softened.
- Stir in the Chicken Curry Spice Paste and cook for 1–2 minutes until fragrant.
- Add the chicken and stir until well coated with the paste.
- Add the potatoes, water, and coconut milk.
- Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the chicken is fully cooked and the potatoes are tender.
- Stir occasionally. If the curry becomes too thick, add a little more water.
- Serve hot.
